Soft Fish Tacos with Jicama-Mango Salsa

Ingredients

  • 1 large lime

  • 1 small mango, peeled and chopped, 1 cup

  • 1/2 small jicama or Gala apple, peeled and chopped, about 2 cups

  • 1 green onion, sliced, 1/4 cup

  • 2 Tbsp. chopped fresh cilantro

  • 8 ounces cod fillet, cut into 1-inch chunks

  • 1/2 tsp. chili powder

  • 1/4 tsp. ground cumin

  • 1/4 tsp. salt

  • 2 Tbsp. PromiseĀ® Buttery Spread

  • 4 corn tortillas, warmed

  • 2 cups shredded lettuce

Directions

  • Zest and juice lime to yield 2 Tablespoons lime juice and 1 Tablespoon lime zest. Toss mango, jicama, scallion, cilantro, lime juice and lime zest in medium bowl; set aside.


  • Season cod with chili powder, cumin and salt. Melt PromiseĀ® Buttery Spread in large non-stick skillet over medium-high heat and cook cod, stirring occasionally, 4 minutes or until cod flakes with a fork.


  • Spoon lettuce and some of the jicama mango salsa into tortillas. Top with cod. Sprinkle with additional cilantro. leaves, if desired. Serve with remaining jicama-mango salsa.
